How To Make Butter

Its so easy!!! Most of us have done this before - by over whipping cream! But there is a little bit of technique involved. As with all cooking the better your ingredients the better the result. This is especially important with butter and cheeses! The better the milk and cream the better your result. Also when doing any thing dairy everything MUST be sterilised!


Ingredients -
Cream ( no thickeners)

Method -
Pour cream into mixer ( I use a kenwood mixer) and beat till thickened cream.

Now keep beating till it starts to separate ...

And....keep beating till the butter becomes one clump and the buttermilk has separated.

Drain buttermilk and keep this for buttermilk pancakes!!
Now add some salted water and 'wash' the butter (only for a few second).

Then discard the water and squeeze the butter out. Now usually I lightly knead the butter on a clean wooden chopping board but this time I put it in a clean cheese cloth and squeezed it out.
