Cherry Crumble

Cherry crumble - yum! Any dessert with cherries is alright with me! In fact they are my favourite fruit - fresh or cooked!

We haven't yet got any cherries off our tree yet, but I was in the mood for a cherry crumble. So I bought a jar of sweet black cherries and a jar of morello cherries.

When making fruit crumbles I always sprinkle almond meal over the fruit before adding the crumble as the almond meal will absorb any extra moisture and ensure a crunchy crumble.

Method-

Strain the cherries ( keep the juice for a sauce after ).
(If using fresh cherries - pit them, put them in a saucepan with enough water to cover them and a table spoon of sugar and gently stew them).
Put the strained cherries into your pie dish and sprinkle with almond meal.
Add crumble. Recipe for crumble here - Crumble for pies.

Put in the oven 180 degrees Celsius till golden brown on top.

With the juice from the cherries, get a small saucepan put 1 cup of cherry juice, 1/4 cup red wine, and  a dessert spoon of honey. Reduce down to half.

Serve your crumble with whipped cream and your cherry and red wine reduction. Yum!!!
