Fish Cakes

My husband and children love this recipe! It's great if you have baked a large fish for a crowd and have leftovers.

Ingredients:

5 potatoes for mashing
450 grams of cooked fish
1 handful of fresh finely cut parsley
Zest of one lemon
3 tablespoons of flour
Salt and pepper
Flour to crumb
1 egg
Breadcrumbs

Method:

Peel and chop potatoes. Boil potatoes in water until tender. Drain off the water, return to the pot and add 1 tablespoon of butter and mash until smooth.

Leave potatoes to cool.

Add shredded cooked fish, parsley and the zest of one lemon, to the cooled potato. Gently mix together.

Add the flour and gently mix well. Add salt and pepper to taste.

Get small handfuls of mixture and roll and flatten into patties.

Then dip each patty into flour, then the lightly beaten egg, then the breadcrumbs.

Shallow fry in coconut oil till golden brown on each side.
