Slow Cooked Beef Ragu

We love good home cooking, real comfort food! This is a really beautiful and easy dish that can be served for a week night meal or for a dinner party! Here is Four Chooks Farm's recipe for Slow Cooked Beef Ragu:

Ingredients:

300-500 grams of rump or chuck steak
1 medium brown onion
3 cloves of garlic
1 cup red wine
1 tin diced tomatoes
1 cup of water
A good handful of basil (or parsley or both!)

Method:

Dice onion, and chop steak into large chunks.

In a frypan with a tablespoon of olive oil, add garlic (I add them whole but you can crush or dice them), onion, and chuck steak and brown the beef for a few minutes.



Add the red wine and reduce by 1/3. Remove from heat.

Into an oven dish add the tin of tomatoes and water. Pour over steak and wine mix. Add the fresh chopped herbs. Salt and pepper to taste. (At this stage you can also add some diced carrot, and/or capsicum).



Put into a medium heat oven for 2-3 hours, make sure the meat is falling apart and tender.
(Note check the dish ever hour and add more water if needed).

To serve:

Option 1 -
For a family weeknight meal, I like to serve this on top of creamy mashed potatoes with a side green beans or salad.

Option 2 -
For a dinner party - once cooked, remove the beef from the sauce, and serve the sauce with pasta as an entree. Then serve the beef with fresh crusty bread and a salad for a main meal.
You get two courses from one pot!!!

(This amount will serve 2 adults and 2 children.)
