I love biscuits! The Gourmet Farmer, Matthew Evans said in an episode of his show that "A cup of tea without a biscuit is a wasted opportunity"! I agree!

There is nothing nicer than when friends pop in, and having the house smelling of freshly baked biscuits, then eating them still warm from the oven! Or before the children go to bed, having a warm biscuit and a glass of milk. There really is something very comforting about a biscuit.



This recipe is my go to ALL PURPOSE recipe!

Ingredients:

250 grams plain flour
100 grams of sugar
130 grams of butter (refrigerated)
1 teaspoon of vanilla essence
50-60 mls water

Method:

Preheat oven to 180 degrees celcius.

Mix dry ingredients with vanilla essence and refrigerated butter and mix in a food processor till it is like breadcrumbs.

Add water and mix till it comes together as a dough.

Roll into balls and put onto a baking tray. Squish down with a fork that has been dipped in flour (so it doesn't stick).

Bake for 10-15 minutes or until golden brown.

Variations:

Chocolate - add one tablespoon of cocoa powder

Double Choc - add one tablespoon of cocoa powder and 1/2 cup of choc chips

Fruit & Oat - use only 150 grams of flour and add 100 grams of oats, add 1/2 cup of dried fruits, either sultanas, or apricots - or what ever your family loves!

Jam drops - when biscuit dough has been rolled into balls, place on baking tray and push down gently with the palm of your hand, use your thumb to make an indent and fill with 1/2 teaspoon of jam.

Healthier Option - use 150 grams of plain flour, 100 grams of oats, replace half the butter with coconut oil, and add 1/4 cup Linseeds or sunflower seeds.

Peanut butter - add 2 tablespoons of peanut butter, and a few white chocolate chips.
