Steamed Pork Buns with Dipping Sauce
We had a roast pork in our wood oven on the weekend and had a lot of left over pork meat.
So tonight we had steamed pork buns. I love using left overs to make a completely different meal! Yum!
I do this in my Thermomix but you could easily adjust if you don't have one.
Ingredients-
FILLING:
2 spring onions
1 garlic clove
½ teaspoon five-spice powder
300 g pork
20 g oyster sauce
1 Tablespoons rice or white vinegar
2 teaspoons soy sauce
1 teaspoon honey
Small handful of coriander
DOUGH:
170 g warm water
20 g sugar
2 level teaspoons dry yeast
280 g flour
20 g oil
A pinch of salt
1 teaspoons baking powder
Method -
Put garlic and spring onions in Thermomix and chop on speed 5 for 3 seconds.
Add 15 grams of olive oil and cook 100 degrees for 2 minutes, speed 1.
Add pork and shred on speed 8 for 5 seconds.
Add the rest of the filling ingredients and mix for 10 seconds, speed 5.
Put into a bowl and refrigerate.
Clean out bowl and add all dough ingredients EXCEPT the baking powder. Mix for 6 seconds speed 8. Then interval speed for 2 minutes.
Allow to rise in the Thermomix jug for 1 hour.
Add baking powder and mix on interval speed for a further 2 minutes.
Roll dough onto floured board and seperate into 8 portions.
Roll into 10cm in diameter circles and add a large spoonful of the pork mixture in the centre.
Grab the edges and pinch together to close the bun.
Grease the steaming trays. Put each 2 cm apart.
Fill the Thermomix with at least 600ml water and put on varoma temperature for 25 minutes.
While these are cooking make your dipping sauce.
Ingredients-
60 mls lime juice
60 mls oyster sauce
60 mls water
10 mls white wine vinegar
1 tablespoon sugar
1 clove garlic
1 small chilli
Method-
Cut up chilli and garlic and add all ingredients in a bowl and mix well till sugar is dissolved.
