Collecting Seeds
Once you have bought or been gifted a good variety of vegetables, there is no need to buy anymore!
Once your plants, what ever they may be - carrots, tomatoes, lettuce etc... Have grown, let your biggest and best looking plant go to seed! That basically means - leave it alone! Keep watering, fertilising etc, but do not pick it. All plants (unless too genetically modified!) will create its own seeds.
Usually once they have gone to seed, I simply get an envelope and 'tap' the seeds off the plant into the envelope. Below is a picture of a cos lettuce that is almost ready to seed, and the next pic I simply tapped them straight into the garden where they were - and within days they started to sprout! Marvellous isn't it!!
