Limoncello
I was recently given a bucket or organic home grown limes (they got 11 buckets of limes from one tree! Amazing I know!!)
Any way I made cordial (enough to last the year! Yum) - And STIIIIILLLLLL had limes left! So I spent an afternoon making lime butter, but alas... Still limes so what's one to do but make limoncello! (technically its made with lemons but I used limes!)
Recipe:
Ingredients-
5 organic lemons (or 6 organic limes)
1l bottle vodka (750ml)
750g caster sugar
700ml boiling water
Method-
Peel the zest from all the lemons/limes, make sure not to include any white pith it's bitter!
Put the zest in a large clean jar and pour over the vodka.
Cover with a tightly fitting lid and leave for 2 weeks, shaking the jar each day.
After 2 weeks-
Put the sugar in a heatproof bowl and pour over the boiling water, stirring until the sugar has dissolved.
Add the syrup to the vodka and peels and leave for a further 2 weeks, shaking the jar each day.
Strain into sterilised bottles. (You can add a few strips of lemon zest to each bottle).
Drink straight room temp or on ice, or add to soda water! Enjoy!
