Lime Cordial

was given a bucket of limes last week - yes a BUCKET OF LIMES! 
What does one do with a whole bucket of limes? Make cordial of course. 

Here's how I make my lime cordial;

Ingredients:
2 litres of filtered water
6 cups of sugar
2 Tablespoons of citric acid
2 Tablespoons tartaric acid
The juice of 24 limes
The finely grated zest of 1 lime (optional)

Method:
Combine the water and sugar and heat on the stove until dissolved.
Add the citric and tartaric acids and dissolve well.
Cool slightly and then add the lime juice and lime zest.

Pour into sterilised bottles.
Store in the fridge for up to 4 months.

Or process them - I did mine using the Fowlers Vacola method.
